qty spinach, ½ cup chopped celery, ½ cup chopped onion. 125 gr cream cheese, ½ cup grated cheese.
Boil spinach and celery together. Drain, but in small casserole dish, add chopped onion and stir in cream cheese. Sprinkle grated cheese and shake parmesan cheese over top and put in oven to melt cheeses. (5 – 10 minutes)

½ small cabbage thinly sliced, ½ capsicum diced, 1 onion chopped, two small to medium diced tomatoes. 1 rasher bacon finely chopped (or ham)
Fry cabbage in olive oil or tablespoon butter, add other ingredients cooking all the while, add more butter if required. When cabbage is browned a little and nearly soft place all in serving dish as it is ready to serve.
Cauliflower Fritters
12 ounces frozen cauliflower
1 large egg….beaten well
butter
sour cream
salt & pepper
chopped spring onion
Cook cauliflower, drain. Put in mixing bowl and mash it (or use a food
processor) until it forms a paste with some little chunks.
Pour egg, onions and seasonings into cauliflower and mix well
Melt some butter in a frying pan (med. heat). Ladle a small amount into the pan and make sure to push the sides so it forms a circle. Cook until brown and flip carefully. Brown the other side. You can serve with a dollop of sour cream on top.
