GREEN BEANS WITH MUSHROOMS CREAM SAUCE

1 lb. Green beans, fresh
1 t. splenda
1 t. salt
Pinch baking soda
Hot Water
2 oz. Butter
4 oz. Button Mushrooms, sliced
1/2 C. Cream
Salt and Pepper to taste
1 T. Chopped Parsley, garnish

Wash, string and diagonal slice the beans.
Place them in a saucepan together with splenda, salt, soda and enough water to cover.
Simmer gently for about 15 minutes. Drain.
In a saucepan melt the butter and in it sauté the sliced mushrooms.
Add the beans and gently blend in the cream.
Simmer for 2 minutes.
Season to taste and serve garnished with chopped parsley

6 servings, 6 carbs, 2.7g fiber, protein 2.1g


French Fries

6 oz. Daikon-radishes
1 Egg
Crushed Pork Rinds

Slice the radish like you would french fries.  Beat egg in a bow and coat the fries.  Put fries in a bag filled with crushed pork rinds and shake.  Put fries in pan containing 1/4" hot oil.  Cook until golden brown and crispy.

These are wonderful, you will never miss potato fries again and they total to only


Batter Fried Vegetables

1/4 C. Soy Powder
1 Egg, beaten
1/4 t. Baking Soda
2 T. Heavy Cream
1 t. Lemon Juice
3 T. Olive Oil
1 t. Mrs. Dash
Sliced Veggie of Choice

Slice, rinse and blot dry veggies.  If you're using eggplant try soaking the slices in a bowl of buttermilk for 15 minutes before hand then blot dry but don't rinse.

Heat vegetable oil in large skillet to about 1 1/2- 2".  While it heats mix first 7 ingredients in a deep bowl.   This will make a pasty mixture.  Then begin adding COLD water very slowly and mixing after each little bit until you get the consistency of thin pancake batter.  This usually takes less then 1/2 C.

Toss a snippet of batter in the skillet or fryer to test the heat of oil.  If it sizzles, you're ready.  Dip each vegetable slice into the batter to evenly coat and then place directly into the hot oil.  Work quickly and in batches, turning as needed.  Have paper towels at the ready for draining each batch.  You can keep batches warm in a 250˚ oven if you like.

When done serve veggies ringed around outside edges of pretty salad plates with a dipping cup in the center filled with blue cheese, ranch, sour cream, or your favorite low carb dip.  For extra prettiness, sprinkle each "round" with paprika as they come out of skillet.


Mushroom pie.

200 grams of fresh musrooms, chopped.
1 Large onion  chopped.
Salt and pepper.
3 Tablespoons of Mushroom soup
750 grams of Low fat cream cheese.
3 Eggs.

Fry the onions with the mushrooms, Add the salt and pepper and the mushroom soup.
 When it is all blended together with aroma and taste! You pour into a pan and stir well with the cheese and eggs.
 That’s it!

Put in the oven for about 45 minutes at 250 degrees. Bon appetit!

Cottage cheese, Broccoli casserole.

2 Cups of cottage cheese.
3 Eggs.
8 ounces shredded cheddar cheese.
 20 ounces frozen broccoli partially thawed.
Salt and pepper to taste.

Preheat oven to 350.F
Combine ingredients and place into a casserole or baking dish,
Bake uncovered  for 60 minutes.
1663 calories, 99g total fat, (52 calories from fat) 151 gram protein, 48 carbohydrates. 837 mg cholesterol, 3545 sodium.


Crustless Quiche.

5 Large eggs.
1/2c of frozen spinach (thawed and drained)
1/2c grated cheese.
1/2teaspoon garlic powder.
˝ teaspoon paprika.
1/3cup of heavy cream.

Preheat oven to 350degrees. Spray a deep dish with non stick spray.  Whisk eggs until well beaten. Add heavy cream and whisk again blending well.  Add other ingredients, mix well and pour into pie dish. Bake ˝ hour until cheese starts to brown around edges of the dish.  You can use other ingredients other than specified, experiment! 2.4 carbs. 6 servings.


Low Carb chilli.
 
3lb (11/2 kilos) ground meat (beef,turkey,chicken pork or a mixture.)
6 cloves of garlic minced.
1 cup of green peppers, chopped.
1 quart of canned tomatoes. (sugar free)
3 tablespoons chilli powder.
1 teaspoon cumin.
˝ teaspoon of Tabasco sauce.
1 small bay leaf.
˝ cup of red wine or water.
Salt to taste.


Holly's Cauliflower Creation

The amounts aren't exact - I made it up!
1 head of cauliflower - cooked and mashed w/ potato masher
1 pkg. cream cheese - softened
1/2 pkg. patty sausage cooked and crumbled (I cook the whole thing and use 1/2 for quiche and 1/2 for this!)
smoked gruyere cheese (any smoked cheese would work - or plain cheese but I REALLY recommed this!) - sliced

mix the cauliflower, cream cheese, and sausage together. Put 1/2 of cauliflower mix. in a baking dish - top with 1 layer of cheese - add remaining caul. mix. and top with another layer of cheese. Bake at 350 for about 30 min. - the smoked cheese doesn't really look melted, but it is!

I've posted this before - but thought I'd do it again for anyone who doesn't have it!

This is great heated up for leftovers!
