TUNA & OLIVE EGG DELIGHT:

Ingredients:
 6 eggs
1 cup pitted black olives
1/4 cup flaked canned tuna
1 tsp dijon mustard
4-5 Tbsp olive oil
Black Pepper
Lemon Juice
 
Hard cook the eggs and plunge them into cold water. When cold, shell the eggs, halve them lengthwise and carefully remove yolks. Set aside. Pound the olives, add tuna, and pound until mixture perfectly smooth. Blend in mustard and olive oil..until creamy and thick.  Season to taste with ground pepper and a little lemon juice.  Press the egg yolks and blend into mixture.
Pile stuffing into egg.  Arrange stuffed eggs on a bed of lettuce or watercress and serve.
