Lambs Fry & Bacon

Soak 1 small Lambs Fry in Salt water 1 hour or more.

 Take skin off, and trim out white parts as you slice in very thin slices.  (Like bacon rashers)

Put 1 tablespoon butter in pan with a spoonful of crushed garlic, and add meat.  Cook quickly tossing to brown all over.  Remove from pan.

Cut 4 or 5 bacon rashers in to pieces and put in pan with more butter and 1 chopped onion.

Cook until onion is clear, then put lambs fry back into pan.  Toss until will mixed then add some ground pepper and a can of chopped tomatoes.  Allow to come to the boil and simmer ten minutes, stirring from time to time.  You may add a small quantity of tomato paste if required.

This should serve four people.

Beef Stroganoff
1/2 kg beef strips.  4-5 mushrooms, 1 onion, ½ capsicum, teaspoon crushed garlic

Cook beef strips with garlic in tblspn butter, add chopped onion and capsicum.

When nearly cooked add mushrooms.  stir in l pack sour cream just before serving.

 Pasta Meat Sauce.

 500 grs mince. teaspoon garlic, 1 onion, ¼ capsicum, 1 tin tomatoes, 1 pack tomato paste. 1 tin champignons.

 Fry mince and garlic in butter or olive oil, add other ingredients, tomato paste last.

Simmer.  Serve with grated parmesan cheese.  You can put this in a casserole dish and grate cheese to serve as a supper dish.

 BEEF BAR-B-QUE

3 lb. Beef Chuck Roast
Chopped Onion
3 T. Artificial Sweetener
2 t. Yellow Mustard
Salt and Pepper to Taste
2 t. Paprika
2 Cloves Garlic
1/3 C. Vinegar (Cider Vinegar is best)
1 T. Worcestershire sauce
1 Can Tomato Paste 1.6 oz
1 C. Water

Put meat in crock-pot. Mix all other ingredients and pour over meat. Turn crock pot on high and let it go for about 4 hours then reduce heat to low and cook 6 hours or so.
The longer the better. Remove meat to a plate and let cool a bit. Then shred it using forks, and return to sauce. Can be eaten immediately or refrigerated for later.
If meat doesn't shred easily than it needs to cook longer.

Add Carbs for onions depending on how much you want to use.
 


CHICKEN A LA JAN

8 oz. Cream Cheese
1/2 C. Mozzarella Cheese, grated
1/4 C. Chives
1/2 lb. Bacon, cooked and chopped

Preheat oven to 375°.
Soften cream cheese and mix well with mozzarella, chives and bacon. Rinse chicken breasts and pat dry. Flatten out. (You could use a mallet but I didn't). Spoon "blob" of filling onto each chicken breast and securing with a toothpick or two. (Don't worry about securing the ends-if there is some extra it makes a sauce to spoon over after cooking.)
Place on ungreased pan and sprinkle with Parmesan or Romano cheese.
Bake at 375° for approx. 45 minutes or until lightly browned.

CHICKEN ALFREDO WITH BROCCOLI AND MUSHROOMS

2 Chicken Breast
Store bought Alfredo Sauce (naturally low-carb)
Frozen Broccoli prepared per directions
Butter Mushrooms


Heat skillet and add butter. Brown the chicken breasts. Add two tablespoons of the Alfredo Sauce and stir. Add the prepared broccoli and mushrooms. Simmer over medium heat for 20 minutes (may need to add some of the broccoli water to thin sauce)

 


CHICKEN CORDON BLEU

1 Boneless Chicken Breast per serving
1 Slice of deli ham per serving
3 or 4 oz. Cheddar, Munster and/or Monterey Jack Cheese

Preheat oven to 350°.
Cut the chicken breast into long strips and use to cover the bottom of an 8x8" baking pan.
Cut ham into strips. Lay over the chicken so that each piece is covered.
Grate cheese(s) over the ham until covered with a nice layer of cheese.
Bake at 350° for 20 minutes
Serve with salad or faux potatoes.
 


Little sausages.

500 grams. (1 lb.) of minced chicken or pork, or combination of both.
Dried Onion flakes.
½ tsp. Of dried sage, other herbs may be used as to taste.
1 Dessert spoon of protein powder.
1 Dessert spoon of soy flour (Whey powder).

Mash the herbs and mince meat together, then slowly add the flour and protein powder.
Roll into small sausage shapes using a little soy flour to prevent sticking.
Fry gently until golden brown.

 


Egg and bacon quiche.

6 Eggs beaten together.
 200 grams. Chopped bacon.
Shredded cheese.
Tablespoon of cream.
Small amount of cooked veggies.
 (Zucchini, onion, green beans, cabbage etc.).

Spread the cooked veggies over  the bottom of and oven proof dish.
Sprinkle with cheese
Cover with a layer of bacon pieces, (I partially cook mine)
To the beaten eggs add the cream and a further shake of cheese and pepper.
Pour over the veggies and top with a shake of cheese (paprika can also be sprinkled over.)
Cook in a preheated oven (180) for approx. 35 minutes (When browned and a knife comes out cleanly when tested.


Herbed Chicken.

1 Whole jointed chicken (or breasts).
4  Tablespoons of melted butter.
2 Cloves of garlic.
1 t of basil.
½ t of sage.
½ t thyme.
½ t Lemon pepper.

Brush chicken with melted butter and rub with garlic.
Combine the herbs and rub well into the chicken.
Bake at 360 for 30-40 minutes.


Four cheese chicken.

2 Chicken breasts.
¼ cup of Ricotta cheese.
2 Tbs Parmesan Cheese.
¼ - ½ cup of Grated cheddar cheese, depending on flavour.
1 300 g tub of cream.
¼ cup of mozarella cheese.
1 Tablespoon of oil. 

Place oil in fry pan, place chicken breasts between gladwrap and beat with meat cleaver or rolling pin until 1 cm thick.

 Mix ricotta, parmesan and mozzarella cheese. Spread cheese onto chicken fillets and roll up like swiss rolls.  May require securing with tooth picks.  Fry in pan for a few minutes to brown.  Remove from baking dish and place in baking dish.  Pour cream into pan and turn off heat, add cheddar cheese and stir gently until melted.  Pour over the top of the chicken and place in a hot oven for 20 minutes.

 Approx. 5-7 carbs.

Tuna Cups.
From Lil.

1 Tin of Tuna 425 grams
2 Tablespoons of mayonnaise.
1 Tablespoon of curry powder.
½ cup of cream.

Mix all together and spoon 1/3 of the mixture on to two cupped lettuce leaves.
Enough mixture for 3 servings.
